One-Pan Shrimp Fajitas

Serves 4
Ingredients

454 gr (1 bag) Rock Harbour White Pacific Shrimp, Raw, P&D Tail-off, thawed as per package instructions

2 tbsp Olive oil

3 peppers, sliced

Seasoning:

4 tbsps sweet paprika

1 tsp onion powder

1 tsp garlic powder

1 tsp oregano

Salt & pepper to taste

For the fajitas:

Soft tortillas

Choose your favourite toppings: Guacamole, salsa, sour cream, cilantro, lime wedges.

Directions
  1. Heat oil in a cast iron skillet or large pan over medium heat.
  2. Mix all the seasoning ingredients in a small bowl.
  3. Add the peppers to your pan and season with half the seasoning. Sauté until soft.
  4. Push peppers to one side of the pan and add shrimp to the empty side of pan. Season with remaining seasoning.
  5. Sauté shrimp until opaque and cooked through.
  6. Serve with tortillas and toppings.
