Easy Lobster Curry

Serves 2

200 gr (1 bag) Rock Harbour Spiny Lobster Tail Meat

2 tbsp coconut Oil

1/2 medium yellow onion, chopped

1 garlic clove, minced

1 can unsweetened coconut milk

1/2 cup water

1-2 tbsp yellow Curry Paste

1 tbsp fish Sauce

1 tsp brown Sugar

2 small zucchinis, cut into 1" cubes

1 cup sugar snap peas, cut in half

Jasmine rice, cooked per package instructions

Lime & cilantro for garnish

  1. Heat coconut oil in pan over medium heat. Add onion and garlic and cook until soft.
  2. Add coconut milk, water and simmer for 5 minutes. Add curry paste, fish sauce and sugar, stir and let simmer for 5 minutes more.
  3. Stir in vegetables, simmer for another 5 minutes followed by the lobster and simmer for 5 more minutes or until lobster is fully cooked.
  4. Serve on top of rice garnished with fresh cilantro and lime.
